Healthy Caramel Popcorn

Picture and Recipe Source: Lauren’s latest

This healthy replacement for processed treats is so delicious and doesn’t take long to prepare at all. You can barely taste the difference between this healthy substitute and store bought caramel popcorn! Not to mention it’s gluten free, vegan, and contains no sugar. It’s a treat everyone can enjoy!

INGREDIENTS

Coconut Oil

Popcorn Kernels

Vanilla

Maple Syrup

Salt

INSTRUCTIONS

  1. Start with 1/2 of popcorn kernels. Place them in a pan with some melted coconut oil and put the lid on. Every 20-30 seconds, shake the pan back and forth so all the kernels cook evenly. After about 5 minutes the popcorn should be done, set that aside
  2. In a small saucepan, measure out some REAL maple syrup, salt and more coconut oil. Lightly boil the mixture for 2 minutes until it thickens
  3. Add some vanilla and pour the mixture over the popcorn
  4. Stir to coat. If you’d like, you can spread the popcorn out on a baking sheet to set more, or you can eat as is
