Easy Low Carb Cauliflower Mac & Cheese

This easy dish is a great substitute for boxed mac & cheese, and so much healthier too! It’s also keto friendly as well as vegetarian and gluten free


1 head Cauliflower, cut into florets

1 teaspoon Salt

1 teaspoon Mixed Herbs (Italian Seasoning)

1 drop each: doTERRA Oregano, Basil, Thyme

1/2 teaspoon Ground Black Pepper

3 tablespoons Olive Oil

1 cup shredded Cheddar Cheese

1/2 cup Heavy Whipping Cream

1 tablespoon Ghee (Clarified Butter)

1 pinch Ground Nutmeg

3 tablespoons Grated Parmesan Cheese


  1. Preheat oven to 450° F. Line a baking sheet with aluminum foil
  2. Arrange cauliflower on the prepared baking sheet. In a small bowl, add olive oil, essential oils, and dried herbs. Sprinkle with salt and pepper. Drizzle with prepared mixture and toss until coated
  3. Roast in the preheated oven for 10 to 15 minutes, or until crisp. Place in an 8-inch baking dish
  4. Combine cheddar cheese, heavy cream, ghee, and nutmeg in a saucepan over medium  heat. Simmer for about 5 minutes or until bubbly. Pour over cauliflower and mix well. Sprinkle parmesan cheese on top
  5. Bake in the preheated oven for about 10 minutes, or until golden brown
