Banana Protein Pancakes

These healthy Banana Protein Pancakes can be whipped together in a matter of 10 minutes and only a blender is required! Plus, they are high in protein and fiber, filling you up until lunch! Say hello to your new favorite breakfast!!

INGREDIENTS 

Oats

Chia Seeds

Eggs

Egg Whites

Banana (Best if overripe)

Vanilla Extract

Baking Powder

Cinnamon 

Salt

Protein Powder (Optional)

INSTRUCTIONS

  1. In a blender, mix together all of the ingredients listed above until combined and smooth
  2. Preheat griddle or pan to medium high heat. Spray with cooking spray 
  3. Using a tablespoon, scoop pancake mixture on the pan so it forms a medium-sized circle (use about 2 heaping tablespoons of mixture for each pancake)
  4. Cook for about 4-5 minutes on the first side or until the edges start to harden and bubbles start to form on the surface. Flip and cook for an additional 1-2 minutes on the other side
  5. Serve with fresh banana slices, peanut butter, chocolate chips, shredded coconut, maple syrup, homemade strawberry jam, fresh berries, or anything else you desire
